I'm not sure if this is the correct forum for this, but it does involve beers from all around the world.
Does anyone have a good beer cellar started?
I keep trying to start one, but I always fail because I get excited about the beers in my basement and I go and drink them all. I think the trick is to buy multiples of each beer (maybe 4) you are trying to cellar so you can drink one immediately, drink one in 6 months, 1 year and then the last indefinitely (or at your discretion).
In another post I mentioned that yesterday I picked up these beers: 750ml saison dupont 750ml Rodenbach Grand Cru 750ml Maredsous 10 Tripple 4pack 12oz Weyerbacher Blithering Idiot
I've never had any of those 750ml beers, so I'll probably drink those over the next month, but I'm going to try and save a few of those Blithering Idiots and see how they age.
A few weeks back I picked up a case of Ommegang Abbey Ale, and since I have a whole case I'm doing my best not to drink them and see how they change over the next year.
Anyone else have a beer cellar? Or an attempted on?

I don't even have a cellar, so that disqualifies me from this conversation. But a question for you- what is the point of a beer cellar? Just to have different beers "in stock" when you have guests over? Or is it to store them at a cool, but not cold, temperature? Just curious.

The "cellar" is more for aging beers - like a big barley wine or Belgian Strong Ale that get better with time. That way you can try some over time and share with friends on special occasions.

Cellaring can be great, though at times it does very little. Like you said, depends on the beer. I don't have anything in my cellar right now, I did at one time, but I ended up clearing it out when thirsty

My "beer cellar" is gone - I drank it all. Oh well, I don't really have the patience to save beer - it's just too tasty!
